Learn how to choose the best strawberries at the market on any given spring day. Prepare a beautiful classic French entremet called the fraisier, and take it home with you.
This class covers: techniques for lining the French entremet ring, crème pâtissière, crème mousseline, classic Genoise, and correct layering and finishing technique for the fraisier. This workshop has a 6 student limit.
