Description
It was at the foot of the Grande Motte Glacier that in 2011 Jean Michel Bouvier and his wife Catherine set up their second gourmet restaurant. The bet was daring, almost crazy, but in the end the address quickly became one of the best altitude tables in the Tignes - Val d'Isère ski area.
In the kitchen, the father and son duo officiate; Jean Michel and his son Clément (Michelin-starred chef at the restaurant Ursus) work together to enhance the local products they hold dear. They are defined by generous and tasty cuisine, such as this black Baltic prime rib and potato mousseline à la carte.
Nothing is left to chance: everything is local, seasonal, and cooked on site. The altitude requires perfect knowledge of cooking temperatures, a real challenge for chefs and their teams. Without forgetting the grueling daily logistics with the rise of goods at the foot of the Glacier via the funicular and the management of cold on the products.
