Here, the master pizzaiollo is PAPA, an Italian-style PIZZA lover,
His dough is prepared with the finest Italian flours, and he makes his pizzas with as much fresh produce as possible.
He rolls out his pizzas by hand, without presses or rollers, to ensure that the dough is airy and easy to digest, and it's not unusual when you're at the counter to see him juggling his pizza doughs as he rolls them out.
